Food cooked on a BBQ is meant to have a smoky taste – but there are limits to that!
No one wants to be biting into blackened burgers. Nor do they want to be sitting on the Supremo carina furniture while clouds of smoke choke them.
We’ve put together some simple tips that can help you achieve an even grill.
Grill from room temperature
One of the best ways to ensure that everything from fish to meat grills at an even rate is to get it to room temperature first.
Take any food to go on the BBQ out of the fridge half an hour in advance, especially if it is thick meat. That way, the outside will not turn black while the inside stays half raw.
Deploy grill management
A charcoal BBQ should be lit up and ready for action 60 minutes in advance of any food actually going on the grill.
Let the flames build and wait until the charcoal has turned to a white-grey colour, and any smoke has faded before adding the food. Once you are ready to start grilling, create a hotter section with more coals for the meat on one side, while leaving a less heat intensive area on the other for vegetables and fish.
Use metal skewers
Skewers made of metal are not just for turning food safely on a BBQ. The metal acts as a heat conductor, which helps to ensure that food on the grill will cook inside as well as out. Make sure to always use oven mitts when handling them though.
