Regulate the BBQ temperature
Whether you’re cooking slow or fast, regulating your BBQ temperature is important so that your meat continues to sustain its flavour. You don’t want it to burn before you add your sauces.
Add your sauces at the end of the cooking process
The trick with adding sauces your BBQ meat is to add them towards the end of the cooking process. Sauces are not supposed to be cooked at the same high temperatures as meat, so the best thing to do is add them when your meat is nearly done, or when the temperature of your BBQ is lowering.
Prevent burning sauces with vinegar
Even if you manage to add your sauces at lower temperatures, you can further prevent them burning by mixing a little vinegar with your sauces. This thins out the sauce so it will be less likely to burn.
