If you’re planning on hosting a BBQ and the weather isn’t playing ball, these two delicious recipes cook well both in the oven or on the BBQ:
Spicy chicken wings
Make a marinade by combining three tablespoons of honey, olive oil, cider vinegar and hot pepper sauce. Add four crushed garlic cloves, a sprinkle of paprika, a glug of Worcestershire sauce and salt and pepper. Marinate the chicken wings for at least an hour in the fridge before cooking. Drain the wings and keep the remaining marinade to brush over halfway through cooking. They’re lovely and charred when done on the BBQ, and a bit stickier and sweeter when roasted in a hot oven. Cooking time is approximately 20 minutes.
Lamb kebabs with a mint yoghurt dressing
Slice green peppers, onions and mushrooms and thread onto kebab skewers with diced lamb. Remember to pre-soak wooden skewers in water to avoid charring. Simply brush the ingredients with olive oil and season well with garlic salt and black pepper before cooking. If you like a bit of heat, add 2 tablespoons of harissa paste to the glaze. Either cook on the BBQ until the lamb is just starting to char, turning the kebabs regularly, or roast in a hot oven for 25 minutes. For the yoghurt dressing, mix Greek yoghurt with finely chopped fresh mint, lemon, salt and a teaspoon of harissa paste. Serve with a crisp green salad and some artisan breads and you’re good to go, whatever the weather.
