Three errors to avoid when cooking vegetables on a BBQ

A lot of people like to grill vegetables as well as meat when having a BBQ. It makes for a more rounded meal, and the smoky flavouring can appeal even to people who might normally dislike veggies.

There is an art to cooking them well on a BBQ though – including not making these common mistakes.

Picking the wrong vegetables

Technically, any vegetable can be grilled, but not all are equally suited to it. While the likes of bell peppers, onions and courgettes will cook all the way through without leaving a charred exterior, this is not necessarily the case with hard vegetables. If you insist on grilling them, they should be pre-cooked first.

Forgetting to oil the grates

Forgetting to oil the BBQ grates when hot can lead to vegetables sticking to them – and you don’t want your guests to be choking on smoke while sitting on their Outback reclining chairs! All that is needed to avoid such a disaster is to apply some vegetable oil to the grates.

Failing to add enough seasoning

Seasoning is just as important when grilling vegetables as it is with meat. The most basic form of seasoning is adding salt, but you shouldn’t stop there. Take your preferred herbs and sauce and cover the vegetables with it thoroughly. You could even leave them to marinate in the sauce, if you want the flavour to really soak through.

Grilled vegetables are the perfect complement to meat, as long as you grill them right.
